My Fried Ian's Chicken Caesar Salad w/ Cheesy Garlic Croutons
So, I love me some Caesar salad, but I can't imagine myself cooking with a can of anchovies. Maybe I'm closed minded, but I don't like fish that comes in a tin... oh, except for Tuna, which I actually like a lot.
Anyway
My friend Ian gave me this recipe and I like it because it fulfills my need for an anchovy-less Caesar dressing, and it's a great recipe for my leftover roasted chicken. I think y'all will all enjoy it.
Ingredients
salad
- 1 head of romaine lettuce, chopped
- 1 1/2 - 2 cups of cooked chicken
- 1/4 cup grated Parmesan cheese
dressing
- 1 egg yolk (at room temperature)
- 1 tsp warm water
- 1/2 cup olive oil
- 1 clove garlic, minced
- 2 Tbsp lemon juice
- pinch of salt
- pinch of pepper
cheesy garlic crouton
- 8 oz. loaf of french bread
- 1/2 cup melted butter
- 1/2 tsp garlic powder
- 1/4 cup Parmesan cheese
First: the crouton
-Preheat oven to 300 degrees
-Cut bread in 3/4 inch cubes
-Mix butter, garlic powder and cheese. Toss in bread cubes until coated.
-Bake on a baking sheet for 30 to 45 minutes or until crisp and golden
Second: the dressing
-Whisk together egg yolk and warm water in a small bowl
-Slowly whisk in oil, drop by drop. Once it starts to bind (forms an emulsion - you'll be able to tell), gradually add the oil a little faster until all of it has been incorporated and a thick sauce has formed.
-Whisk garlic and salt into the dressing. Add lemon juice. Season w/ pepper
Third: Put it all together
-Rinse and chop (or tear) lettuce. Put it in a large bowl.
-Add dressing, croutons and chicken (cold or heated up in the microwave, your choice). Top w/ Parmesan cheese.
