Episode 32: Tuna Noodle Casserole

Welcome back to Economy Bites! We continue our foray into summer this week with that all American classic: Tuna Noodle Casserole.

Now let's get this out of the way: This is not a glamorous dish. Like all our recipes it's easy, economical and very, very tasty, but no, it is not fancy, and that's intentional. I made tuna noodle casserole! I like tuna! I like cheese and noodles! Together they make a tasty meal any home cook can be proud of! If you think it's passe, that's fine. There are plenty of gourmands cooking complicated masterpieces all over the internet. I'm more interested in providing basic, accessible recipes for people cook to live even if they don't unecessarily live to cook. Plus - I'd defy any of you to taste my tuna noodle casserole and walk away unsatisfied. That's the straight truth.

Let me explain the tirade above. A few years ago, a friend told me cooking was common sense. Not rocket science, but the process of putting 1 and 2 together to make 3.

At the time I was disheartened by this. As a novice cook, I needed (and wanted) instructions on making the basics...on things like chopping onions, making a roux, cooking meat, etc. For me, cooking only became an intuitive process once I had a few skills and beginner recipes tucked away. Those building blocks are what I'm trying to pass along with this show. I want to give you easy basic info. that'll increase your culinary confidence so you too can be comfortable in your kitchen...which, let's face it, is the greatest place on earth.

Occassionaly I get flack for the simplicity of my recipes and their - how you say - home-made qualities. Sometimes people say they aren't even recipes. My suspicion is people with this attitude may have more experience then the ones I hope to reach the most, so it's OK. I think they're looking for something else, and what they want exists...but it's not me and it's not Economy Bites. Say what you want about us, but we never try to be anything we're not.

I just want you - fans, supporters, viewers, all who watch our show - to understand that I have a specific purpose in mind when I pick our recipes. I want you - people who want to cook, who think they could learn to LOVE to cook - to know that you are the ones I do it for.
