Allie's Staple Mish-Mosh Salad

Here's a great little salad idea for when you're ready to re-purpose your roasted chicken. This is my staple mish-mosh lunch. it's healthy, hearty and filling, which is a lot to say for a salad. Enjoy!

Ingredients:

· 1 head of romaine lettuce, chopped

· 1/4 - 1/2 cup grape tomatoes, halved

· 1/4 cup cucumber, sliced thin

· 1/4 cup cooked chickpeas

· 1/4 cup hearts of palm

· 1/2 small red onion, sliced thin

· 1/2 to 1 cup cooked chicken, shredded

· 1/4 cup feta cheese, crumbled

dressing:

· 3 Tbsp balsamic vinegar

· 2 tsp Dijon mustard

· 1/4 cup olive oil

· Salt & Pepper to taste

-Whisk together balsamic vinegar and mustard. Slowly add olive oil and mix until dressing is smooth. Add a dash of salt and pepper.


-Mix all salad ingredients in a big bowl. Add dressing. Eat!
