Corn Bean Salad
INGREDIENTS
-2 14 oz. cans of black beans
-2 14 oz. cans of sweet corn
-1 red onion, diced
-1 package of cherry or grape tomatoes, sliced in half
-1/2 Tbsp olive oil
-1 bunch of cilantro
-2 limes
-salt and pepper
PROCEDURE
-Open cans of corn, rinse and pour into a large serving bowl
-Open cans of beans, rinse and pour into bowl with corn.
-Dice red onion very small and pour into the bowl
-Slice tomatoes and add into the bowl.
-Drizzle with olive oil. Slice limes and squeeze the juice onto the salad.
-Chop a large bunch of cilantro and garnish the salad. Season with salt and pepper.
-Mix and serve with chicken, pork, steak, or just alone!
-To save: cover bowl with plastic wrap or put in
tupperware
***for extra fun, throw in an avacado!
