I've come to love and enjoy baking nearly as much as I love to cook. It's surprising seeing as I 1) hate to follow directions and 2) have the patience of a hummingbird...but somehow it's become the truth. One of my favorite treats to make on the weekends is banana bread, which nearly everyone likes. Luckily, I've got a great recipe!

The most important ingredient in banana bread is flour. No just kidding, it's bananas. Duh. Bananas used in banana bread should be really ripe. The riper the naner, the sweeter and better your bread will taste! Before you pick a banana for banana bread, ask yourself, "is this banana brown? almost black?". If the answer is yes, then that banana is ready to get baked!

Halloween is a big day for me. It's the setting of my favorite family story (mom ate poo, [I'll tell you one day]) it's the day I met my boyfriend (4 years!) and it's an opportunity to get really crazy with our show here at Economy Bites. 99% of the time, our #1 focus is bringing you great, accessible recipes at affordable prices. Occassionally though, our inner creative demons get a hold of Daniel and me and we have to bust out with something a little different. Example A: today's episode!

If you saw last year's Halloween show, you know that, sadly, my life came to an abrupt halt when I was electrocuted in Kitchen Studio. In today's episode...well, let's just say that incident comes back to haunt me.

Welcome to part 2 of our collaboration with Big Girls Small Kitchen. In today's kitchen we team up with Cara, the other 1/2 of the BGSK duo to make a dessert to compliment our Fishballs from last week.

Both Daniel and I are huge carrot cake fans, so you can imagine our delight when Cara suggested we make them in cupcake form for our episode together. Usually I think desserts are a lot harder to make then savory dishes (a lot less room for error) but I felt that this recipe was surpringly easy. The simplicity comes across in the video as well, I dont know if we've ever produced such a chill, slow paced episode. I kinda love it!

-6 or 7 carrots, peeled and grated (about 3 cups)

-1 1/4 cup all purpose flour

-3/4 cup whole wheat flour

-1/2 nutmeg

-2 tsp cinnamon

-2 tsp ground ginger

-2 tsp baking soda

-1 tsp salt

-1 cup sugar

-1 cup light or dark brown sugar

-1 cup Canola oil

-4 large eggs

-1 cup coarsely chopped walnuts (optional)

-1/2 cup raisins (optional)


-8 oz. cream cheese

-12 oz. butter, softened

-1 cup powdered sugar

-3 Tbsp maple syrup (optional)

-2 sticks of butter, melted

-2 cups of flour

-2 cups of sugar

-2 eggs, beaten

-1 cup of water

-1/2 cup buttermilk (can make by adding 1/2 Tbsp vinegar to milk until you have 1/2 cup)

-4 Tbsp cocoa powder

-1 tsp cinnamon

-1 tsp vanilla

-1 tsp baking soda


-1 stick of butter

-1 1lb box of Confectioner's sugar (powdered sugar)

-6 Tbsp 2% milk

-4 Tbsp cocoa powder

-1 tsp vanilla
