Penne a la Vodka
INGREDIENTS
-1 24 oz. jar tomato sauce
-1/2 cup vodka
-3/4 cup heavy cream
-1/2 cup parmesan plus more for topping
-1 box penne
-1 Tbsp oregano
-salt and pepper to taste
PROCEDURE
-In a pot, simmer tomato sauce and vodka on medium heat for 20 minutes, stirring frequently. Sauce should reduce by a fourth.
-Cook penne to package directions
-Once sauce has reduced, add cream and turn heat to low. Stir until sauce is hot and cream is fully incorporated, a few minutes.
-Add parmesan cheese and turn heat back up to medium. Stir until cheese has melted into the sauce. Add oregano and cook another minute or so. Salt and pepper to taste.
-Serve with parmesan cheese on top. Save in the fridge for up to 4 days.
