Hilde's Potato Salad


-3 lbs red potatoes

-1 egg, beaten

-3/4 cup vegetable oil

-1/4 cup vinegar

-1 to 2 Tbsp dill

-1 large white onion, diced

-salt pepper and pepper to taste


-Put potatoes in a large pot. Cover them in water, put the pot on the stove and boil the potatoes until you can stick a fork 3/4 way through the biggest one. Let potatoes cool for 5-10 minutes.

-Beat the egg then mix it with the vegetable oil and vinegar. Set aside.

-Dice onion, set aside.

-Once potatoes have cooled, peel the skin off each one. Chop all potatoes into bite sizes pieces (or slices). Mix with potatoes and pour dressing on top. Season with salt, pepper and dill and refrigerate overnight.
