Veal Meatballs
INGREDIENTS
-2 lb ground veal
-1 onion, finely diced
-4 carrots, finely diced
-2 stalks celery, finely chopped
-1/2 lb spinach, finely chopped
-3 eggs, beaten
-1 1/4 cup breadcrumbs
-1/2 Tbsp lemon juice
PROCEDURE
-Preheat oven to 350
-Dice onions, carrots and celery. Heat pan on high. Add olive oil. Once hot, add veggies and saute until soft, about 5 minutes. Remove from heat and set aside.
-Chop spinach. Beat egg.
-In a large bowl, combine ground veal, breadcrumbs, beaten eggs, spinach, veggies and lemon juice. Mix together until all ingredients are fully incorporated. Wash hands!
-Coat a baking sheet with a little olive oil. Form veal mixture into 20-24 balls and set them on the baking sheet.
-Bake in the oven for 25 minutes flipping the balls once halfway through
