It's Sunday and while I did cook today (episode...46 I believe. You'll see it in a few months) I actually spent most of my day reading. You see, I bought myself a gift this week:

mastering-the-art-of-french-cooking by you.

...and, well, yes, I've fallen into the Julia Cliche. Not only have I seen the movie about 7 times (not exaggerating - I love me some Meryl) I've now resigned myself to reading this whole book...or as much as I can get through without losing complete interest like I did with "My Life In France". I hope I can read and retain at least some of the information in this book. It is chock full of good stuff, which is what I like about Julia in general.

You see, I've been on a Julia kick recently. It all started when I was advised to study the greats of my "profession," aka: people who cooked on TV and who had success with it. So I went out and bought myself some Julia Child on DVD (and the book, too) and I started to take notes. What I learned is that Julia was a wealth of information - she covers not only the HOW of culinary technique, but also the WHY, which is why I think she was so special. I appreciate that she tells you how  to beat egg whites and also WHY her method works. Something with air bubbles...

Anyway - I'm a Julia fan - and I get it now. I see why people loved her. Lady was funny. If you're interested in learned to cook, I suggest you go the cheap route and invest in some Julia DVDs. They're pretty great.

chicken

-1 1/2 lb chicken breast

-1/4 onion white or yellow onion, chopped

-1 clove garlic, smashed

-1 tsp salt

sauce

-2 1/2 lbs tomatillos, rinsed and husks removed

-2 jalapenos, stems removed and seeded

-4 cloves garlic, smashed

-1/2 yellow onion, chopped

-1 bunch cilantro, rinsed and chopped, stems included

-1/3 cup mint, rinsed and packed tight

-1/2 cup cooking liquid

-1/2 Tbsp cumin

-2 tsp salt

-1 Tbsp peanut oil

toppings

-12 corn tortillas

-2 Tbsp peanut oil (plus more if needed)

-3/4 cup Sour Cream

-1/2 cup Cotija cheese or Queso Fresco

INGREDIENTS

-8 plum tomatoes, sliced and dried in the oven

-olive oil

-salt

-6 cloves of garlic, smashed

-4 to 5 filets of anchovies in olive oil (about 2 tsp), chopped and made into a paste

-1/2 cup olives (I used Manzanilla) sliced in half

-28 oz can of whole-peeled tomatoes 

-1/2 cup white wine, plus more for thinning (optional)

-3/4 tsp crushed red pepper

-2 tsp sugar

-1 Tbsp cream

-1/3 cup basil, chopped fine

-3 Tbsp capers

-1 lb pasta shells

Episode 33 is our first jump into Indian food. My recipe for Chana Masala came from weeks of experimenting with this basic recipe. I tried it once verbatim...and it was just OK. 2nd time I played with the spices and it was better, but still not fabulous. 3rd time I added chicken broth and BAM - the wow factor! Just WAIT until you taste this!!

-4 cups chicken broth

-1 Tbsp vegetable oil

-1 large onion, minced

-3 Tbsp cumin

-1/2 tsp cayenne

-2 tsp tumeric

-juice of 2 lemons
