Sunday Night: Cooking with Scott Conant

Hello, everybody. Welcome to Monday morning. If you're like me and you are knee deep into your second cup of coffee, you're probably jutting around the internet looking for something to read. Have no fear, for I will ramble for you!

 

Usually around this time of the day (about 11:45 in the A.M.) I'm thinking about lunch. Today, I'm still stuck on last night's dinner, a 2nd attempt at the Tomato Basil Spaghetti in the vain of Scarpetta, a fancy Italian restaurant here in NYC. 

My first go at this recipe happened last Tuesday. I spent about an hour making sense of it in my head (it's complicated for Spaghetti!!) and then set out to create a masterpiece! I even went to Dean & Deluca, for God sakes, and bought the good Parmesan and fancy canned tomatoes.

Can you guess what happened next? Epic. Fail. WAY too much salt. I even added butter, cream and sugar to hide the saltiness, but that taste refused to dissipate. So I had to trash the whole thing, and Ben ended up eating frozen chicken wings for dinner. Sorry, honey.

I was determined last night to try again, mostly b/c I had leftover ingredients that I didn't want to waste, and I was 90% sure where I went wrong the first time. I'm so glad I did b/c the spaghetti was faaaaabulous this time. Major success and ego boost. YAY, me!

Just thought I would share that, because I feel good about it. Also, it goes to show that the key to cooking is practice, practice, eat, feel nauseous, practice, enjoy!
