Arroz con Pollo y Frijoles


-4 chicken breasts with skin

-1 cup of long grain rice

-2 cups water

-1 chicken bullion cube

-1 packet Goya Sazon seasoning (can substitute any Mexican seasoning)

-1 tub of fresh pico de gallo (or 14.5 oz can of tomatoes, or jar of salsa)

-2 14 oz cans of black beans, juice drained

-1 14 oz can of water

-4 cloves garlic

-2 to 3 Tbsp cumin (for beans)

-1 to 2 Tbsp garlic powder (for beans)

-1 Tbsp chili powder (for beans)

-olive oil

-salt and pepper to taste



1st: start chicken

-Heat 2 to 3 Tbsp olive oil in a skillet on medium-high heat until glistening.

-Add chicken to skillet, skin side down. Sear for 3 to 5 minutes, or until the skin is golden brown and the sides of the chicken are turning white.

-Flip the chicken and continue to cook. It'll take about 20 minutes to fully cook through. Once it's done, season with salt, pepper, chili powder and cumin.

2nd: start rice!

-In a low pot, heat 1 to 2 Tbsp olive oil on medium-high heat until glistening. Add uncooked rice and stir with a wooden fork or spatula for a few minutes until it starts to brown. Add 2 cups of water, the bullion cube (breaking up clumps), seasoning packet and Pico/salsa/jar of tomatoes. Stir so everything is mixed. Bring to a boil then turn heat to low and simmer for 20 minutes with the lid on.

3rd and last: THE BEANS!

-Heat 1 to 2 Tbsp olive oil in a pot on medium-low heat.

-Smash 4 cloves of garlic and add them to the pot. Brown them a little.

-Rinse and drain 2 cans of black beans. Add them to the pot - no juice! Fill one empty can with water and add that to the beans. The beans should be just covered in water, not swimming.

-Bring beans to a boil and then lower them to a simmer. Add cumin, garlic powder, and chili powder. Add hot sauce if you like it spicy. Let the beans simmer until the chicken is done cooking, 10-15 minutes.

-You can save it all together in one, big container, or you can save all three separately. Either way - you will LOVE this spicy, delicious meal!
