Sam's Pork Loin with Mustard Sauce

INGREDIENTS

-4 Lbs Pork Loin (one big one or 2 small ones)

-3 shallots, chopped  

-4 cloves garlic, chopped

-2 Tbsp Peanut or Canola oil

-1 1/2 cup chicken stock

-2 Tbsp butter

-2 Tbsp heavy cream

-Salt and pepper to taste

-1 large bunch broccoli

    Marinade

    -3 Tbsp Dijon mustard

    -1/4 cup olive oil

    -1 Tbsp Rosemary

    -3 cloves garlic, minced

    -1 tsp Vinegar

    -salt and pepper to taste

    PROCEDURE

    -Preheat oven to 375

      -Combine all ingredients for the marinade. Once mixed, place pork on a plate and pour marinade on top. Set aside.

      -Chop shallots and garlic. Set aside seperately.

      -Heat low pot on stove on high heat until very hot. Add peanut or Canola oil to pot. Once hot, add shallots and garlic. Cook for a few minutes, then add the pork, fat side down. Sear about 5 minutes or until the outside of the pork is brown. Flip the pork and sear the other side, about 5 minutes. Once done, remove pork to a baking dish or roasting pan, and turn heat on stove to medium-low.

      -Put Pork in the oven for an 1 hour and 15 minutes.

      -Add chicken stock to pot on stove. Stir, scraping brown bits from the bottom of the pot. Allow to simmer and reduce for about 5 minutes.

      -Turn heat down very low. Add cream and butter and stire to combine until butter melts. Leave sauce on very low heat until Pork is cooked.

      -While Pork is cooking, bring a pot of water to boil. Chop broccoli into florets. Drop broccoli in boiling water for about 20 seconds. Remove to strainer and douse with cold water. Eat with Pork.

      To serve: Slice pork and eat with a spoonful of sauce and broccoli.

      to store put pork in Tupperware, wrap in foil or saran wrap. Put sauce in tupperware or cup covered in foil
