-4 lb chuck roast

-3 to 4 Tbsp peanut oil

-1 cup cooking sherry

-4 cloves garlic, smashed

-2 bay leaves

-1 Tbsp dried parsley

-5 cups chicken broth

-1/4 cup olive oil

-1 Tbsp Rosemary

-3 cloves garlic, minced

-1 tsp Vinegar
