in today's show, we make Pasta alla Norma, the recipe
for which we found in The Geometry of Pasta, a book
from our friends at Quirk Publishing. We plucked our
favorite recipe to bring it to you today!
INGREDIENTS
-1 large eggplant, sliced
-5 cloves garlic, minced
-2 Tbsp olive oil
-2 28 oz cans whole peeled tomatoes
-pinch of red pepper flakes
-Peanut, Canola or Corn oil for frying.
-1 lb Ziti
-1/2 cup pasta water

-8 plum tomatoes, sliced and dried in the oven
-olive oil
-salt
-6 cloves of garlic, smashed
-4 to 5 filets of anchovies in olive oil (about 2 tsp), chopped and made into a paste
-1/2 cup olives (I used Manzanilla) sliced in half
-28 oz can of whole-peeled tomatoes
-1/2 cup white wine, plus more for thinning
(optional)
-3/4 tsp crushed red pepper
-2 tsp sugar
-1 Tbsp cream
-1/3 cup basil, chopped fine
-3 Tbsp capers
-1 lb pasta shells

Woo hoo! To top it off, abc Sacramento news10 aired their interview with us this past Monday. Like I said, HUGE WEEK.
Back in kitchen studio, we've been quietly recipe testing (OK, more like loudly burning things) and approving new episodes for the comming months. After watching the one above, I thought maybe you'd want to know the actual names for the techniques I used in the episode...yes, I do know a few. So here they are, some real live culinary terms that relate to today's show:
- mise en place: the organizing and arranging of ingredients before cooking begins. In this episode the carrots, onion and celery are my mise en place in today's episode.
- julienning: is what I did to the carrots when I sliced them into rectangles, then into slices, then into sticks. I believe in the video I say I'm turning them into matchsticks.
- brunoised: when I turned my julienned carrots 90 degrees and diced them into tiny little cubes
Tada! I know things, and now you do too. Just wanted
to get that out of the way so in the future when
people say, "Allie, you never give us any good, actual
info about the culinary world," I can be like,
"AHEM..."
Recipe tips:
INGREDIENTS
-3 medium carrots, diced fine
-1 medium yellow onion, diced fine
-3 stalks celery hearts with leaves, diced fine
-2 to 3 Tbsp olive oil
-2 cloves garlic. minced
-1 Tbsp dried parsley
-1 lb ground beef
-1 lb italian sausage (casing removed)
-1 Tbsp tomato paste
-2 28 ounce cans whole peeled tomatoes with juice
-2 or 3 bay leaves

Recipes » Thai Chicken PastaINGREDIENTS
-4 thinly sliced boneless, skinless chicken breasts
-1 to 2 Tbsp grill seasoning
-1 box of thick spaghetti
-1 large seedless cucumber, pealed and sliced thin
-2 red peppers, chopped into strips
-4 or 5 large carrots, sliced thin
-1 bunch of scallions, chopped
-cilantro, chopped (for garnish)
-1 lime for juice
Sauce
-1/3 cup peanut butter, microwaved for 30 seconds
-1 shallot, diced
-1/2 cup apple cider vinegar or rice wine vinegar
-1/2 cup soy sauce
-1/2 cup honey
-1 Tbsp sesame oil
-2 Tbsp hot sauce
-2 tsp crushed red pepper
